Steak tartare, with arugula & pickled onions
Hand cut beef tartar from the strip loin with roasted shallot puree, cornichons, extra virgin olive oil emulsion with Dijon and pickle juice. Arugula puree, fresh arugula and pickled onions with a farm fresh egg yolk.
