Tuna tartar with bamboo rice and crispy vegetables


This is a dish designed for summer, light and fresh. The bamboo rice is prepared the same as for sushi, The tartar is dressed with a fermented black bean vinaigrette and contains; shallots, hearts of palm, scallions and pickled ginger. The vegetable garnish on top is comprised of baby corn, julienne of red bell pepper, pickled ginger, hearts of palm and water chestnuts. The dish is garnished with Nori oil and kecap manis "aka" sweet soy.
